Roti

This is a simple flatbread recipe that is made almost daily in many Indian households.

Ingredients:

  • 3 cups whole wheat flour
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1 1/2 cup hot water
  • butter

Instructions:

  • Put all the ingredients in a mixing bowl and mix by hand until soft.
  • Knead the dough at least 5-10 times. Add flour if the mixture is too sticky.
  • Divide the dough into 12-14 balls, then use a rolling pin to roll each ball to the size of an 8 inch plate.
  • Put the stovetop burner on high heat and fry the roti in a pan. It will cook very quickly.
  • Wait 5 seconds then turn it, then put butter on the fried side. After 10 seconds turn it over again and put butter on the other side.
  • Repeat until roti is golden brown on both sides.

Serve warm alone or paired with steamed vegetables, plain yogurt dip, or lightly spreaded with jam.



Mango Lassi

A really fun and easy recipe to make is Mango Lassi. I don't measure, so the challenge will be for you to make it to your taste.

Ingredients:

  • Plain yogurt
  • Mango nectar or mango puree (I buy mango puree at my Indian grocer's and believe it or not, I found mango nectar in a 1 liter bottle on the top shelf of my tiny, small-town (think 6000 people) Wisconsin city. If you can't find either, you could use fresh, cubed mango and puree it or frozen or jarred mango chunks.
  • Sugar

Instructions:

  • Mix about 1 cup of plain yogurt with about 1/3 - 1/2 cup of mango in a blender
  • Add sugar to taste (maybe a tsp. or two)
  • You can also add crushed ice or serve over ice

This is basically a smoothie (albeit a juicy, runny one). Lassi is served as a refreshing drink in hot weather in India.
